Begin each day with yoga practice led by Katie at the villa. Let the ritual of the asanas practiced within the ancient stone buildings center your mind and spirit and set the tone for a day of good living.

After morning yoga, nourish your body with a breakfast in the Italian style - local fruits, juices, pastries from the nearby pasticceria or homemade by Cara, yogurt and cheese direct from local farms and, of course, espresso.

outings and excursions.jpg

Journey throughout the region to explore Puglia’s beautiful and varied landscape - from ancient hilltop towns to white limestone beaches with turquoise waters. Free time is yours to spend as you wish, doing what feeds your soul. Lounge poolside and get lost in a novel, paint with watercolors or knit in the shade of an olive tree, meander through the kitchen to see what Cara is preparing, walk along the country roads, tag along on a trip to the market to shop for the nights dinner or simply enjoy a nap in a hammock.

Each day’s menus will be based on the best seasonal offerings of the local markets, focusing on traditional regional recipes and presenting a wide variety. Meals will be served family style and always include an abundance of dishes ranging from simply prepared vegetables to homemade pastas and grilled meats and fish. Guests with dietary restrictions such as vegan, vegetarian and gluten-free can easily be accommodated.

After a late afternoon restorative yoga session or planned outing we will partake in the Italian tradition of the Aperitivo - a small snack paired with a cocktail or glass of prosecco enjoyed before dinner. Again, in the ways of the Italians, dinner will be served in the early evening in one of the properties outdoor dining rooms. Like the midday meal, dinner will be served family style and paired with regional wines.

cena pranzo.jpg

Over the course of the trip you will be introduced to regional specialties like Orecchiette con Sugo di Pomodoro e Cacioricotta, Purea di Fave con Cicoria, Ciceri e Tria and Pasticiotto. Experience fruits, vegetables and sea creatures not found in the US and taste some of the finest cheeses, olives and olive oil you’ll ever have. You’ll learn how the incredibly varied landscape of the Puglian region is the source of an incredible bounty of diverse foods, from olive oil and wheat to burrata, lamb and seafood.
